Domaine Séailles is one of the pioneers of organic viticulture in the Côtes de Gascogne region of Southwest France. A family-owned estate since 1961, Séailles is now run by Jean Labérenne, who lead the domaine to Ecocert organic certification in 1997, swearing off all chemical fertilizers, herbicides, insecticides, and synthetic chemical products.
Presto Blanc is made from a 50-50 mix of all-organic Sauvignon Blanc and Sauvignon Gris that's aged in stainless steel tanks for 6 months. It's light, it's bright, it's full of freshness and it stands out from a sea of bleh that usually comes from this region. There's generous dollops of white grapefruit and tart white peach with a sort of elderflower liqueur vibe lingering in the background and a combo of grassiness and saltiness on the finish. It has a slight sense of sharpness across the lean, tense palate but it never loses itself.
Have it with grilled white fish, a light salad, pasta aglio e olio or even a bag of chips if you're not in the mood for cooking and cleaning.
